Eggplant Parmigiana

I don’t think this really needs instructions, but here goes.
INGREDIENTS
- 2 large eggplants
- 6-8 eggs, beaten (with 1/2 cup grated cheese)
- Marinara sauce
- salt/pepper
- 2 cups bread crumbs
- 16 oz. mozzarella, sliced thin
- olive oil for frying
INSTRUCTIONS
- Peel the skin from eggplants
- Slice eggplant in half, then into slices, 1/4″ thick
- Dip eggplant in egg mixture and then roll in bread crumbs
- Fry until light brown
- In baking pan put a layer of eggplant, sauce and mozzarela cheese, make layers until pan is full
- Top with mozzarella, grated cheese and sauce.
- Bake in 350-degree oven for 35 minutes until cheese melts.
