2012-04-09 – Mayo

If you don't want to spend $4 on mayo, and you're not afraid of a raw egg, make some.


  • 1 egg yolk
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon dry mustard
  • 2 pinches sugar
  • 2 teaspoons lemon juice
  • 1 tablespoon white wine vinegar
  • 1 cup corn oil


  • Whisk together yolk and dry ingredients.
  • Combine lemon juice and vinegar and then whisk half into yolk mixture.
  • While whisking, start adding oil a few drops at a time until an emulsion forms.
  • Increase flow of oil to light stream and continue whisking. Once half of the oil is incorporated, add the rest of the lemon juice mixture.
  • Continue whisking until all oil is incorporated.
