Bratwurst
Our first attempt at a linked sausage.
Ingredients
- 4 pounds pork shoulder
- 1 pound beef
- 2 tablespoons Kosher salt
- 1 tablespoon nutmeg ground
- 2 teaspoons all spice
- 1 teaspoon ground ginger
- 1 cup milk cold
- 2 eggs beaten
- 1 cup non-fat dry milk powder
Instructions
- Grind pork with fine plate on food grinder.
- Add ground beef.
- Chill meat mixture.
- Grind a second time through fine plate on food grinder.
- Mix seasonings in by hand.
- Stuff into hog casings, making 5- to 6-inch links.
