Auto Draft

Ingredients  

  • 6 eggs
  • 2 Tbsp flour
  • ¼ tsp salt
  • tsp grated nutmeg
  • freshly ground black pepper to taste
  • 1 cup half and half
  • 1 cup milk
  • 3 cups cooked vegetables
  • 2 Tbsp minced basil
  • 1 cup grated cheddar cheese
  • 1 cup grated Parmesan cheese

Steps 

  1. Mix eggs, flour, salt, nutmeg, and pepper.
  2. Whisk in half and half and milk.
  3. Stir in cooked vegetables, cheddar cheese and 1/2 cup Parmesan cheese.
  4. Coat 4-quart (or larger) slow cooker with cooking spray and pour mixture into it.
  5. Sprinkle remaining 1/2 cup Parmesan cheese on top.
  6. Cook for 1 1/2 hours on high or until center is set.
