Whipped ricotta English muffin with banana
Steps
- Spread the peanut butter over the English muffin halves.
- Using a fork, whip the ricotta and nutmeg together for about 1 minute until light and airy. Spread the whipped ricotta over the English muffin. Top with sliced banana.
- TIP: If you have a unit of Sweets spare, dip some fresh thyme sprigs in some honey and add as a garnish. Thyme honey is a lovely ingredient. Poke half a bunch of fresh thyme into a jar of honey and keep in the fridge. It will keep for 12 months. Freeze any unused fruit for smoothies in future weeks.
