Ingredients  

  • 1 cup quinoa
  • 1 tbsp olive oil
  • ¼ cup onion minced
  • 1 clove garlic minced
  • 2 cans black beans drained and rinsed
  • 2 tbsp taco seasoning
  • ¼ cup lime juice

Steps 

  1. Rinse the quinoa thoroughly in a mesh strainer or sieve, drain.
