Rice salad with snow peas & feta
Ingredients
- 1 tsp Mustard 0.2oz
- 1 tsp Extra virgin olive oil 0.2oz
- 2 tbsp Fresh lemon juice 1.1oz
- 1 dash Black pepper
- ½ cup Mushrooms, pieces 1.2oz
- 4.4 oz Instant brown rice, cooked 4.4oz
- ½ cup Cabbage, shredded 2.6oz
- ½ cup Snow peas, sliced 2.8oz
- 4 tbsp Carrot, shredded 1oz
- 1 ½ tbsp Red onion, chopped 0.5oz
- 45 g Feta cheese, reduced-fat crumbled 1.6oz
Steps
- In a small bowl, whisk mustard, oil, lemon juice and pepper. Add mushrooms and marinate for 5 minutes.
- Place rice in a serving bowl and add cabbage, snow peas, carrot and onion. Toss to combine.
- Add marinated mushrooms to salad. Top with feta cheese to serve.
- TIP: For cooler days, feel free to quickly fry up mushrooms and onion to mix through warm rice bowl.
