In a small bowl, whisk mustard, oil, lemon juice and pepper. Add mushrooms and marinate for 5 minutes.
Place rice in a serving bowl and add cabbage, snow peas, carrot and onion. Toss to combine.
Add marinated mushrooms to salad. Top with feta cheese to serve.
TIP: For cooler days, feel free to quickly fry up mushrooms and onion to mix through warm rice bowl.
