Salmon & avocado sandwich
Ingredients
- 3 oz Canned salmon
- ½ tbsp Red wine vinegar 0.3oz
- ½ tsp Dried mixed herbs
- 1 tbsp Capers, drained 0.3oz
- 1 stalk Celery, medium, diced 1.4oz
- 5 Cherry tomatoes, diced 3oz
- ¼ Lemon, medium, juiced 0.7oz
- 2 slices Whole-grain bread 2.3oz
- 2 tbsp Avocado, mashed 1.1oz
- ½ Cucumber, medium, sliced 3.5oz
- 1 cup Baby spinach 0.7oz
Steps
- In a small bowl, combine salmon, vinegar, herbs, capers (if using), celery and tomatoes. Squeeze with lemon juice and mix together.
- Spread one slice of bread with avocado and top with salmon mixture, cucumber, spinach and remaining slice of bread to make a sandwich.
- TIP: For cooler days, toast sandwich in a sandwich press for a warm lunch option. If preferred, add salad vegetables after toasting.
