Salmon & avocado sandwich

Ingredients  

  • 3 oz Canned salmon
  • ½ tbsp Red wine vinegar 0.3oz
  • ½ tsp Dried mixed herbs
  • 1 tbsp Capers, drained 0.3oz
  • 1 stalk Celery, medium, diced 1.4oz
  • 5 Cherry tomatoes, diced 3oz
  • ¼ Lemon, medium, juiced 0.7oz
  • 2 slices Whole-grain bread 2.3oz
  • 2 tbsp Avocado, mashed 1.1oz
  • ½ Cucumber, medium, sliced 3.5oz
  • 1 cup Baby spinach 0.7oz

Steps 

  1. In a small bowl, combine salmon, vinegar, herbs, capers (if using), celery and tomatoes. Squeeze with lemon juice and mix together.
  2. Spread one slice of bread with avocado and top with salmon mixture, cucumber, spinach and remaining slice of bread to make a sandwich.
  3. TIP: For cooler days, toast sandwich in a sandwich press for a warm lunch option. If preferred, add salad vegetables after toasting.
