Peanut butter toast with berry compote

Ingredients  

  • ¾ cup Frozen berries, any type, use fresh if preferred 5.2oz
  • 1 cup Non-fat plain Greek yogurt 7oz
  • 2 slices Whole-grain bread 2.3oz
  • tsp Peanut butter, reduced sugar & salt 0.3oz

Steps 

  1. Place berries in a microwaveable bowl, cover and heat on medium for 30 seconds, or until defrosted.
  2. In a small bowl, add berries (with juice) to yogurt and mix gently.
  3. Toast bread and spread with peanut butter.
  4. If you’re feeling adventurous, serve the yogurt mixture on top of the peanut butter toast (it’s delicious!). Otherwise enjoy separately.
