Quick roasted tomato & feta bruschetta
Ingredients
- 10 Cherry tomatoes mixed colour halved 6oz
- ½ tsp Extra virgin olive oil 0.1oz
- 3 tbsp Avocado mashed 1.6oz
- 2 slices Whole-grain bread toasted 2.3oz
- ¼ cup Feta cheese reduced-fat crumbled 1.3oz
- 4 leaves Basil fresh 0.1oz
- 1 dash Black pepper
- ¼ lime Lime 0.6oz
- ½ pint Strawberries hulled halved 6.3oz
Steps
- Preheat the oven to 400°F. Scatter the tomatoes in a small roasting pan. Drizzle lightly with oil, season. Roast for 5 minutes until just softened.
- Spread the avocado over the toast. Top with feta and roasted tomatoes. Sprinkle with basil. Season and serve with lime wedge.
- Serve with a side of strawberries.
