2012-04-09 – Mayo
If you don't want to spend $4 on mayo, and you're not afraid of a raw egg, make some.
- 1 egg yolk
- ½ teaspoon fine salt
- ½ teaspoon dry mustard
- 2 pinches sugar
- 2 teaspoons lemon juice
- 1 tablespoon white wine vinegar
- 1 cup corn oil
Whisk together yolk and dry ingredients.
Combine lemon juice and vinegar and then whisk half into yolk mixture.
While whisking, start adding oil a few drops at a time until an emulsion forms.
Increase flow of oil to light stream and continue whisking. Once half of the oil is incorporated, add the rest of the lemon juice mixture.
Continue whisking until all oil is incorporated.
