2012 Turkey Brine

Ingredients

  • 2 quarts water
  • ¾ cup Kosher salt
  • cup granulated sugar
  • 1 quart cranberry juice
  • 1 large onion diced
  • 8 baby carrots diced
  • 6 cloves garlic smashed, but not peeled
  • 4-5 sprigs fresh rosemary
  • 4-5 sprigs fresh sage
  • 6 bay leaves
  • 4 quarts water additional

Instructions

  • Warm 2 quarts water, add salt & sugar and dissolve.
  • Remove from heat, add everything except extra water. Chill
  • The day before cooking, put turkey, brine mixture and enough water to cover in 16-quart stock pot.
