Heat a large wok or skillet over high heat and add the olive oil and garlic. Stir-fry for 1 minute until fragrant.
Add the turkey and cook, stirring for 2 to 3 minutes until the turkey begins to brown. Add the green beans, carrot and mushrooms and continue to stir-fry for 3 to 4 minutes until the vegetables are tender and the turkey is cooked.
Stir in the hoisin sauce and lemon juice. Season lightly and toss to combine. Remove the wok from the heat and toss in the green onions.
Place 2 lettuce leaves into two serving bowls each and spoon ground turkey into cups.
