Asian-style lettuce wraps with turkey

Ingredients

  • 1 tbsp Extra virgin olive oil 0.5oz
  • 2 tsp Garlic, minced 0.2oz
  • 8 oz Ground turkey, lean, raw 8oz
  • ¾ cup Green beans, trimmed, finely sliced 2.6oz
  • ½ cup Carrot, shredded 1.9oz
  • 1 cup Mushrooms, pieces 2.5oz
  • 1 tbsp Hoisin sauce 0.6oz
  • 2 tbsp Fresh lemon juice 1.1oz
  • 2 medium Green onion, finely sliced 1.1oz
  • 4 leaves Iceberg lettuce 1.1oz

Instructions

  • Heat a large wok or skillet over high heat and add the olive oil and garlic. Stir-fry for 1 minute until fragrant.
  • Add the turkey and cook, stirring for 2 to 3 minutes until the turkey begins to brown. Add the green beans, carrot and mushrooms and continue to stir-fry for 3 to 4 minutes until the vegetables are tender and the turkey is cooked.
  • Stir in the hoisin sauce and lemon juice. Season lightly and toss to combine. Remove the wok from the heat and toss in the green onions.
  • Place 2 lettuce leaves into two serving bowls each and spoon ground turkey into cups.
