Preheat oven to 425°F. In a small bowl, combine red curry paste, soy sauce and lime juice. You want the marinade to be thick so add soy sauce in slowly.
Line a baking sheet with parchment paper and place fish in the center. Spoon over marinade, ensuring that the top of the fish is covered. Bake the fish for 10 to 12 minutes, or until the fish is cooked through.
Meanwhile, heat oil in a non-stick skillet. Cook the broccoli and bell pepper for 6 to 8 minutes, or until bright and tender. Add a splash of water to the skillet to help cook the vegetables.
Serve vegetables with baked red curry fish, top with cilantro and serve with lime wedges.
TIP: If you have salt-reduced fish sauce in your pantry, you could add ½ teaspoon.
