Cast-iron Roasted Potatoes

Brats added above for a one-dish easy peasy summertime meal.

Ingredients

  • 2 lbs potatoes diced
  • 1 large sweet onion chopped
  • 2 Tbsp olive oil
  • 1 tsp fresh rosemary leaves
  • ½ tsp coarse salt
  • freshly ground black pepper

Instructions

  • Preheat cast iron skillet in oven at 350˚F or grill on medium heat.
  • Combine all ingredients in a bowl or plastic bag and mix or shake well to coat.
  • Once pan is hot, pour potato mixture in and roast for 45 minutes or until potatoes are tender.
