Cast-iron Roasted Potatoes
Brats added above for a one-dish easy peasy summertime meal.
- 2 lbs potatoes diced
- 1 large sweet onion chopped
- 2 Tbsp olive oil
- 1 tsp fresh rosemary leaves
- ½ tsp coarse salt
- freshly ground black pepper
Preheat cast iron skillet in oven at 350˚F or grill on medium heat.
Combine all ingredients in a bowl or plastic bag and mix or shake well to coat.
Once pan is hot, pour potato mixture in and roast for 45 minutes or until potatoes are tender.
