Combine garlic, lime zest, lime juice, chipolte powder, cumin, honey, black pepper, apple cider vinegar, and olive oil in a plastic bag and mix well. Add sliced chicken and marinate for at least 1 hour.
Cook chicken and marinade in skillet until chicken is cooked through. Add peppers and onions.
Serve with black beans, or over salad or with low-sodium corn tortillas.
