Low Sodium Chicken Fajitas

Ingredients

  • 3 cloves garlic
  • zest of 1 lime
  • juice of 1 lime
  • dash of chipolte powder more if you are brave
  • 1 tsp cumin
  • 2 tsp honey
  • ¼ tsp black pepper
  • cup apple cider vinegar
  • 1 Tbsp olive oil
  • 1 lb chicken breast cut into strips
  • 1 bell pepper sliced
  • 1 sweet onion sliced

Instructions

  • Combine garlic, lime zest, lime juice, chipolte powder, cumin, honey, black pepper, apple cider vinegar, and olive oil in a plastic bag and mix well. Add sliced chicken and marinate for at least 1 hour.
  • Cook chicken and marinade in skillet until chicken is cooked through. Add peppers and onions.
  • Serve with black beans, or over salad or with low-sodium corn tortillas.
