Peanut Butter
Stores for up to 2 months in the refrigerator - as if it wouldn't be eaten in less than 2 weeks.
- 6 cups toasted unsalted shelled peanuts
- ¼ cup light olive oil
- 1 ½ teaspoon salt
- 2 Tablespoons honey
Process nuts in food processor for 2 minutes or until mixture becomes slightly pasty.
Add oil, salt and honey and continue to process for 3 more minutes or until mixture is creamy, smooth and spreadable. It may be somewhat more fluid than what you expect, but it will be warm from the processing. Once refrigerated, the mixture will harden into a more manageable spread.
Store covered in airtight container in fridge for up to 2 months.
