Tomato & basil chicken

Ingredients

  • 2 tsp Extra virgin olive oil 0.3oz
  • 4 ½ oz Chicken breast, raw, sliced or diced 4.5oz
  • 1 ½ tbsp Red onion, chopped 0.5oz
  • 1 tsp Garlic, minced 0.1oz
  • 1 tsp Dried mixed herbs 0.1oz
  • 2 ½ tbsp Red bell pepper, chopped 0.8oz
  • 1 cup Mushrooms, whole, sliced 3.4oz
  • ½ 15oz can Canned diced tomatoes, fire-roasted 8.7oz
  • 2 cup Arugula 1.4oz
  • 5 leaves Basil, fresh 0.1oz
  • 14 medium Lemon, juiced 0.7oz

Instructions

  • Heat oil in a non-stick frying pan or wok. Add chicken and cook, while stirring for 4-5 minutes until browned. Add onion, garlic, and dried mixed herbs, and cook for a further 5 minutes.
  • Add bell pepper and mushrooms. Stir through tomatoes and bring to the boil. Reduce heat to low, cover and let simmer for 5 minutes.
  • Remove from heat, stir in the arugula and basil. Drizzle with lemon juice to serve.
