New York-Style Pizza Dough

Ingredients  

  • 5 cups 22.5 ounces bread flour
  • 1 ½ Tbsp sugar or honey
  • 3 ½ tsp kosher salt
  • 1 ½ tsp instant yeast
  • 3 Tbsp olive or vegetable oil
  • 1 ¾ cups room-temperature water

Steps 

  1. Mix all ingredients in the bowl of an electric stand mixer with the dough hook attachment on low speed for 4 minutes. Let the dough rest for 5 minutes, then mix again on medium-low speed for 2 minutes, or until the dough clears the sides of the bowl and sticks just a little to the bottom. Add flour or water as necessary. The dough should pass the windowpane test.
  2. Divide the dough into 3 equal pieces. Round each piece into a ball and brush with olive or vegetable oil. Place each ball in its own plastic bag. Let the balls sit at room temperature for 15 minutes. Then place in the refrigerator overnight. Or in the freezer if you are not using them right away.
  3. The next day, remove the balls from the refrigerator 2 hours before you plan to roll them out to take off the chill and relax the gluten.
