After a few near misses on the Italian sausage recipes, I decided to go another direction and just find a sausage with things I like in it.  This is what I found.

Onion Sausage

Ingredients  

  • 7 lbs ground pork
  • 2 ½ oz salt
  • 4 oz finely chopped onions
  • 1 Tbsp coarse black pepper
  • 1 Tbsp ground marjoram
  • 12 oz cold beer
  • 4 Tbsp liquid smoke

Steps 

  1. Combine all ingredients, mix well. Divide into 1-pound portions, vacuum pack, label and freeze.
