Grilled shrimp with spicy peanut noodles
Steps
- Cook the noodles according to packet instructions. Transfer to a bowl.
- In a small bowl, combine peanut butter, sweet chili sauce, soy sauce and 2 tablespoons of boiling water until a smooth consistency. Set aside.
- Heat a non-stick skillet over medium heat. Add the shrimp. Cook over medium heat for 3 to 4 minutes, until shrimp are opaque in the center and browned on both sides. Remove and set aside.
- Divide the noodles between two serving bowls. Top with the shrimp and coleslaw vegetable mix. Drizzle over the spicy peanut sauce and enjoy!
- TIP: If you prefer, you can saute the coleslaw vegetables in the skillet for a few minutes to warm them up. Add chili flakes for an extra kick of spiciness.
