Grilled shrimp with spicy peanut noodles

Ingredients  

  • 1 ½ oz Soba noodles or whole-wheat thin spaghetti, uncooked
  • 1 tbsp Peanut butter, reduced sugar & salt ½oz
  • 1 tbsp Sweet chili sauce, low-sodium 0.6oz
  • Soy sauce low-sodium, 1 tsp(s) (0.2oz)
  • Shrimp raw, 11 oz(s) (11oz)
  • Coleslaw vegetable mix 6 cup(s) (12.1oz)

Steps 

  1. Cook the noodles according to packet instructions. Transfer to a bowl.
  2. In a small bowl, combine peanut butter, sweet chili sauce, soy sauce and 2 tablespoons of boiling water until a smooth consistency. Set aside.
  3. Heat a non-stick skillet over medium heat. Add the shrimp. Cook over medium heat for 3 to 4 minutes, until shrimp are opaque in the center and browned on both sides. Remove and set aside.
  4. Divide the noodles between two serving bowls. Top with the shrimp and coleslaw vegetable mix. Drizzle over the spicy peanut sauce and enjoy!
  5. TIP: If you prefer, you can saute the coleslaw vegetables in the skillet for a few minutes to warm them up. Add chili flakes for an extra kick of spiciness.
