Grilled shrimp with spicy peanut noodles

Ingredients

  • 1 ½ oz Soba noodles or whole-wheat thin spaghetti, uncooked
  • 1 tbsp Peanut butter, reduced sugar & salt ½oz
  • 1 tbsp Sweet chili sauce, low-sodium 0.6oz
  • Soy sauce low-sodium, 1 tsp(s) (0.2oz)
  • Shrimp raw, 11 oz(s) (11oz)
  • Coleslaw vegetable mix 6 cup(s) (12.1oz)

Instructions

  • Cook the noodles according to packet instructions. Transfer to a bowl.
  • In a small bowl, combine peanut butter, sweet chili sauce, soy sauce and 2 tablespoons of boiling water until a smooth consistency. Set aside.
  • Heat a non-stick skillet over medium heat. Add the shrimp. Cook over medium heat for 3 to 4 minutes, until shrimp are opaque in the center and browned on both sides. Remove and set aside.
  • Divide the noodles between two serving bowls. Top with the shrimp and coleslaw vegetable mix. Drizzle over the spicy peanut sauce and enjoy!
  • TIP: If you prefer, you can saute the coleslaw vegetables in the skillet for a few minutes to warm them up. Add chili flakes for an extra kick of spiciness.
