Black bean quesadilla

Ingredients  

  • ¼ 15oz can Black beans, drained and rinsed 3.7oz
  • 1 Whole-wheat tortilla 1.4oz
  • 2 tbsp Avocado 1.1oz
  • 1 tbsp Part-skim mozzarella cheese, shredded 0.2oz
  • 2 cups Lettuce, shredded 3.3oz
  • 2 tbsp Salsa 1.3oz

Steps 

  1. In a bowl, mash the black beans and season to taste. Spread the mashed beans over half of one side of the tortilla. Top with the avocado and mozzarella cheese. Fold the tortilla in half to cover the filling.
  2. Heat a non-stick skillet over medium heat. Place the tortilla in the pan and cook for 1 to 2 minutes, then flip and cook for a further 1 to 2 minutes, until both sides of the tortilla are golden brown.
  3. Transfer the quesadilla to a serving plate and cut into wedges. Serve with shredded lettuce and salsa.
