French toast with sliced banana

Ingredients  

  • 1 large Egg 1.8oz
  • ½ tsp Cinnamon
  • 1 slice Whole-grain bread 1.1oz
  • 1 tsp Extra virgin olive oil 0.2oz
  • 1 small Banana, sliced 3.6oz
  • ¼ cup Non-fat plain Greek yogurt 2oz

Steps 

  1. In a shallow bowl, lightly beat egg, cinnamon and 1 tablespoon of water. Add the bread to the bowl and allow it to soak thoroughly in the egg mixture for 15 to 20 seconds each side.
  2. Meanwhile, heat the oil in a non-stick skillet over medium heat.
  3. Add the egg-coated bread to the skillet and cook for 2 to 3 minutes on each side, until light golden brown. Adjust heat if the outside is cooking too quickly.
  4. Remove from pan and place onto a serving plate. Top with sliced bananas and a dollop of Greek yogurt on the side for dipping.
  5. TIP: If you have an air fryer, the French toast works really well. Preheat the air fryer to 350°F. Spray both sides of the bread with oil and lightly spray the air fryer basket. Place the bread into the basket and air fry for 6 to 8 minutes or until light golden. If you have walnuts, sprinkle over for a nice crunch.
