Pesto muffin pizza

Ingredients  

  • 1 Whole-wheat English muffin 2.3oz
  • 2 tbsp Tomato paste, or pizza sauce 1.1oz
  • 2 tsp Pesto, low sodium 0.3oz
  • 5 Cherry tomatoes, chopped 3oz
  • cup Part-skim mozzarella cheese, shredded 1.3oz

Steps 

  1. Preheat the oven to broil. Line a baking sheet with parchment paper.
  2. Lightly toast both English muffin halves.
  3. Spread the tomato paste onto each muffin half, followed by the pesto. Top with the tomatoes and sprinkle over the cheese.
  4. Place under the broiler for 3 to 4 minutes, or until the cheese has melted.
