Pesto muffin pizza

Ingredients

  • 1 Whole-wheat English muffin 2.3oz
  • 2 tbsp Tomato paste, or pizza sauce 1.1oz
  • 2 tsp Pesto, low sodium 0.3oz
  • 5 Cherry tomatoes, chopped 3oz
  • cup Part-skim mozzarella cheese, shredded 1.3oz

Instructions

  • Preheat the oven to broil. Line a baking sheet with parchment paper.
  • Lightly toast both English muffin halves.
  • Spread the tomato paste onto each muffin half, followed by the pesto. Top with the tomatoes and sprinkle over the cheese.
  • Place under the broiler for 3 to 4 minutes, or until the cheese has melted.
