Herbed ricotta toast

Ingredients  

  • 3 oz Part-skim ricotta cheese 3 oz(s) (3oz)
  • ½ tsp Dried mixed herbs
  • 1 tsp Extra virgin olive oil 0.2oz
  • 2 tsp Balsamic vinegar 0.4oz
  • 2 slices Whole-grain bread, toasted 2.3oz
  • 1 medium Tomato, whole, sliced 4.3oz
  • 1 cup Baby spinach 0.7oz
  • 1 dash Black pepper

Steps 

  1. In a small bowl, combine the ricotta and dried mixed herbs. In a separate small bowl, combine oil and balsamic vinegar to make a dressing.
  2. Spread ricotta mixture over both slices of toast and top with tomato and spinach. Drizzle over dressing. Season to taste.
  3. TIP: Tomato and spinach can also be served as a salad on the side.
