In a small bowl, combine the ricotta and dried mixed herbs. In a separate small bowl, combine oil and balsamic vinegar to make a dressing.
Spread ricotta mixture over both slices of toast and top with tomato and spinach. Drizzle over dressing. Season to taste.
TIP: Tomato and spinach can also be served as a salad on the side.
