Pesto chicken pasta

Ingredients  

  • 3 oz Whole wheat pasta, uncooked 3oz
  • 5 oz Chicken breast, cooked, sliced 5oz
  • 2 cups Arugula 1.4oz
  • 2 tsp Pesto, low sodium 0.3oz
  • 1 small Lemon, juiced 2oz
  • 5 Walnuts, chopped 0.4oz
  • 1 medium Tomato, whole, sliced 4.3oz
  • 1 medium Cucumber, sliced 7.1oz

Steps 

  1. Cook pasta according to packet instructions.
  2. In a bowl, combine cooked pasta, chicken and arugula. Stir through the pesto and lemon juice. Top with the walnuts.
  3. Divide between two serving bowls. Enjoy with slices of tomato and cucumber on the side.
