Pesto chicken pasta

Ingredients

  • 3 oz Whole wheat pasta, uncooked 3oz
  • 5 oz Chicken breast, cooked, sliced 5oz
  • 2 cups Arugula 1.4oz
  • 2 tsp Pesto, low sodium 0.3oz
  • 1 small Lemon, juiced 2oz
  • 5 Walnuts, chopped 0.4oz
  • 1 medium Tomato, whole, sliced 4.3oz
  • 1 medium Cucumber, sliced 7.1oz

Instructions

  • Cook pasta according to packet instructions.
  • In a bowl, combine cooked pasta, chicken and arugula. Stir through the pesto and lemon juice. Top with the walnuts.
  • Divide between two serving bowls. Enjoy with slices of tomato and cucumber on the side.
