Spicy satay noodles & chicken stir-fry

Ingredients  

  • 1 ½ oz Soba noodles or whole-wheat thin spaghetti, uncooked 1.5oz
  • 1 tbsp Peanut butter, reduced sugar & salt 0.5oz
  • 2 tsp Sweet chili sauce, low-sodium 0.4oz
  • 2 tsp Soy sauce, low-sodium 0.3oz
  • 6 oz Chicken breast, raw, cut into strips 6oz
  • 2 ½ cups Red bell pepper, chopped 13.1oz

Steps 

  1. Prepare noodles according to packet instructions.
  2. In a small bowl, combine the peanut butter, sweet chili sauce, soy sauce and ¼ cup of boiling water. Stir until sauce reaches a smooth consistency. Set aside.
  3. Heat a non-stick skillet over medium-high heat. Add the chicken, stir-fry for 3 to 4 minutes, until browned and cooked through. Remove and set aside. Add bell peppers to the skillet and cook for 2 to 3 minutes, until heated through.
  4. Divide the noodles between two serving bowls. Top with the chicken and bell peppers. Drizzle over the spicy peanut sauce. Toss to combine.
