Lemon garlic shrimp with barley

Ingredients  

  • 1 ⅓ oz Barley, uncooked
  • 11 oz Shrimp, raw
  • 1 small Lemon, juiced 2oz
  • 2 tsp Garlic, minced 0.2oz
  • 2 tsp Extra virgin olive oil 0.3oz
  • 1 cup White onion, chopped 5.6oz
  • 1 bunch Asparagus, chopped 1 bunch(es), chopped (4oz)

Steps 

  1. Prepare barley according to packet instructions.
  2. Into a bowl, add the shrimp, lemon juice and garlic. Toss to coat.
  3. Heat the oil in a large non-stick skillet over medium heat and sauté the onions and asparagus for 5 to 6 minutes, until softened. Place into a bowl, cover to keep warm and set aside.
  4. Place the same skillet back over medium heat. Add the shrimp and cook for 2 to 3 minutes, or until cooked through.
  5. Divide the barley between two serving bowls. Top each bowl with the onions, asparagus and shrimp. Spoon over any remaining juices.
