Double cheese quesadilla

Ingredients  

  • 2 ½ tbsp Cheddar cheese, reduced-fat, shredded 0.6oz
  • 3 tbsp Part-skim ricotta cheese 1.6oz
  • 1 Whole-wheat tortilla 1.4oz
  • 1 medium Tomato, whole, diced 4.3oz
  • 1 cup Lettuce, shredded 1.3oz
  • 2 tbsp Avocado 1.1oz

Steps 

  1. In a small bowl, combine cheddar cheese and ricotta. Spread over one half of the wrap. Top with tomato and fold in half.
  2. Place into a sandwich press, or a non-stick skillet over medium-high heat. Toast until the cheese has melted and the tortilla is lightly golden.
  3. Serve quesadilla with lettuce and mashed avocado.
