Soy garlic steak with mushrooms & barley

Ingredients  

  • oz Barley, uncooked 0.7oz
  • 3 oz Beef tenderloin steak, any grade, very lean
  • 2 tsp Soy sauce, low-sodium 0.3oz
  • 1 tsp Garlic, minced 0.1oz
  • 1 tsp Extra virgin olive oil 0.2oz
  • 3 cups Mushrooms, slices 7.4oz

Steps 

  1. Prepare barley according to packet instructions.
  2. Place the steak into a shallow dish and add the soy sauce and garlic. Rub over steak and allow to marinate for at least 10 minutes.
  3. Heat olive oil in a non-stick skillet over medium-high heat, add the mushrooms and sauté for 2 to 3 minutes. Spoon onto a serving plate and cover with foil to keep warm.
  4. Heat same skillet to medium heat. Once hot, cook steak (save the marinade) for 2 to 3 minutes each side for medium, or until cooked to your liking. Pour over the marinade juices and cook for a further 1 minute.
  5. Place steak onto a serving plate and serve with the mushrooms and barley. Pour over any remaining juices.
