Steak quinoa bowl

Ingredients  

  • oz Quinoa, uncooked 0.7oz
  • 3 oz Beef tenderloin steak, any grade, very lean
  • 1 tsp Extra virgin olive oil 0.2oz
  • 1 Lime, juiced 2.4oz
  • 1 large Red bell pepper, raw, sliced 5.8oz
  • ¼ cup Cilantro, fresh 0.2oz

Steps 

  1. Prepare quinoa according to packet instructions.
  2. Drizzle both sides of steak with the oil. Season to taste.
  3. Heat a non-stick skillet over medium-high heat until hot. Once hot, cook the steak for 3 to 4 minutes each side for medium, or until cooked to your liking. Squeeze half the lime juice over the steak while cooking. Remove to a plate, cover with foil and allow to rest for a few minutes.
  4. Meanwhile, return the skillet and any remaining juices to medium-high heat. Add the bell peppers. Place a lid over the skillet and steam for about 2 to 3 minutes.
  5. Remove the steak to a cutting board and cut into thin slices.
  6. Add the quinoa to a serving bowl. Top with the steak and peppers. Toss to combine. Garnish with cilantro and squeeze over remaining lime juice.
