Simple roast beef sandwich

Ingredients  

  • 2 slices Whole-wheat bread 2.3oz
  • 2 tbsp Avocado 1.1oz
  • 3 oz Sliced deli beef, reduced sodium
  • 1 ½ tbsp Red onion, chopped 0.5oz
  • 5 Cherry tomatoes, halved 3oz
  • ½ Cucumber, ribbons or sliced 5.3oz
  • 2 ½ tbsp Red bell pepper, chopped 0.8oz
  • 1 handful Baby spinach 0.8oz

Steps 

  1. Spread 1 slice of bread with avocado and top with sliced beef, onion, tomatoes, cucumber, bell pepper and spinach. Top with other slice of bread to make a sandwich.
  2. TIP: For cooler days, toast bread and microwave or heat beef in a frying pan for a warm lunch.
