Fruity toast with ricotta compote

Ingredients  

  • ¾ cup Frozen berries, any type 5.2oz
  • 5 tbsp Part-skim ricotta cheese 2.7oz
  • 1 slice Whole-wheat bread 1.1oz
  • 4 Walnuts, chopped 0.3oz
  • 1 small Latte, plain, nonfat milk 11.5oz

Steps 

  1. Place berries in a microwavable bowl, cover and heat briefly in microwave for 30 seconds on medium.
  2. In a small bowl, add berries and juices to ricotta and mix gently.
  3. Toast bread and spread with ricotta berry compote. Sprinkle with walnuts to serve.
  4. Follow with a takeaway coffee, or a latte made at home with 1 cup of milk.
