Zesty lemon chicken salad
Ingredients
- ⅔ cup Instant brown rice, cooked 5oz
- 2 oz Chicken breast, cooked, shredded 2oz
- 2 tsp Light mayo 0.4oz
- 1 dash Black pepper, ground
- 2 tbsp Carrot, shredded 0.5oz
- ¼ Cucumber, diced 2.7oz
- 2 handfuls Baby spinach 1.7oz
- 1 tbsp Parsley, fresh, chopped 0.1oz
- ¼ medium Lemon, zested and juiced 0.7oz
- 2 Walnuts, finely chopped 0.1oz
Steps
- Prepare rice according to packet instructions. Place rice in a serving bowl.
- In a small bowl, mix chicken and mayo together and season well.
- Add chicken mix to rice, along with carrot, cucumber, spinach and parsley.
- Top with lemon juice, zest and walnuts. Season to taste and mix well.
