Prepare rice according to packet instructions. Place rice in a serving bowl.
In a small bowl, mix chicken and mayo together and season well.
Add chicken mix to rice, along with carrot, cucumber, spinach and parsley.
Top with lemon juice, zest and walnuts. Season to taste and mix well.
