French toast with pear & ricotta

Ingredients  

  • 1 large Eggs, raw 1.8oz
  • 1 sliced Whole-wheat bread 1.1oz
  • 1 tsp Extra virgin olive oil 0.2oz
  • 5 tbsp Part-skim ricotta cheese 2.7oz
  • 1 small Pear, shredded or sliced 5.2oz
  • ½ tsp Ground nutmeg

Steps 

  1. In a shallow bowl, lightly beat egg. Add 1 slice of bread to bowl and soak thoroughly in egg mixture.
  2. Meanwhile, heat oil in a non-stick frying pan over medium heat.
  3. Add soaked bread to pan, and pour any remaining egg mixture in to pan. Cook each side for 30 seconds, or until lightly browned.
  4. Remove from pan and place on serving plate. Spread ricotta over bread and top with pear.
  5. Serve sprinkled with nutmeg (optional).
  6. TIP: If you have sweets to spare, you can drizzle honey or maple syrup over the top.
