French toast with pear & ricotta

Ingredients

  • 1 large Eggs, raw 1.8oz
  • 1 sliced Whole-wheat bread 1.1oz
  • 1 tsp Extra virgin olive oil 0.2oz
  • 5 tbsp Part-skim ricotta cheese 2.7oz
  • 1 small Pear, shredded or sliced 5.2oz
  • ½ tsp Ground nutmeg

Instructions

  • In a shallow bowl, lightly beat egg. Add 1 slice of bread to bowl and soak thoroughly in egg mixture.
  • Meanwhile, heat oil in a non-stick frying pan over medium heat.
  • Add soaked bread to pan, and pour any remaining egg mixture in to pan. Cook each side for 30 seconds, or until lightly browned.
  • Remove from pan and place on serving plate. Spread ricotta over bread and top with pear.
  • Serve sprinkled with nutmeg (optional).
  • TIP: If you have sweets to spare, you can drizzle honey or maple syrup over the top.
