Walnut & beet salad
Ingredients
- ⅔ cup Instant brown rice, cooked 5oz
- 2 handfuls Baby spinach 1.7oz
- 1 small Beets, pre-cooked and sliced 1.8oz
- 1 ½ tbsp Red onion, chopped 0.5oz
- ½ cup Parsley fresh, leaves 1.1oz
- ¼ cup Feta cheese, reduced-fat, crumbled 1.3oz
- 1 tbsp Balsamic vinegar 0.6oz
- 1 dash Black pepper, ground
- 4 Walnuts, chopped 0.3oz
Steps
- Prepare rice acording to packet instructions. Place rice into a serving bowl. Add spinach, beet, onion, parsley and feta.
- Drizzle with vinegar and season to taste. Gently mix. Sprinkle walnuts on top and serve.
- TIP: You can purchase pre-cooked beets in most supermarkets.
