Chicken “fried” rice
Ingredients
- ⅔ cup Instant brown rice, cooked 5oz
- 2 oz Chicken breast, cooked and shredded
- 2 tbsp Carrot, shredded 0.5oz
- ½ medium Tomato, whole, chopped 2.2oz
- 2 large handfuls Baby spinach 3.1oz
- 1 medium Green onion, chopped 0.5oz
- 1 tsp Extra virgin olive oil 0.2oz
- 1 tsp Soy sauce, low-sodium 0.2oz
- 1 dash Black pepper, ground
Steps
- Prepare rice according to packet instructions. Place rice in a serving bowl.
- Add chicken, carrot, tomato, baby spinach and green onions to bowl. Drizzle with extra virgin olive oil and soy sauce. Toss to mix and season to taste.
