Ginger soy beef stir-fry

Ingredients  

  • 2 tsp Extra virgin olive oil 0.3oz
  • 1 tsp Garlic, minced 0.1oz
  • 1 tsp Ginger, minced 0.1oz
  • ¼ Red chili pepper, finely chopped 0.4oz
  • 4 oz Beef tenderloin steak, any grade, very lean, finely sliced 4oz
  • 2 ½ tbsp Red bell pepper, chopped 0.8oz
  • 1 cup Broccoli florets 2.5oz
  • 4 tbsp Carrots, shredded 1oz
  • ½ tbsp Soy sauce, low-sodium 0.3oz

Steps 

  1. Heat oil over high heat in a wok or non-stick frying pan. Add garlic, ginger, chili pepper (if using) and beef and cook until the meat is just brown. Spoon into a bowl.
  2. Return the wok to the heat and add the bell pepper, broccoli and carrot. Cook, while stirring, for 3 to 4 minutes. Spoon the meat and any juices back into the pan and cook for a further 2 mins.
  3. Add the soy sauce and stir to warm through.
  4. Serve immediately for dinner.
  5. TIP: Feel free to add some fresh chili to add a little spice.
