Quesadilla with bell peppers & jalapeño

Ingredients  

  • 1 Whole-wheat tortilla 1.4oz
  • cup Cheddar cheese, reduced-fat, shredded 1.3oz
  • tbsp Red bell pepper, chopped 0.8oz
  • tbsp Red onion, chopped 0.5oz
  • ½ Pickled jalapeno pepper, chopped 0.4oz
  • 5 Cherry tomatoes, sliced 3oz
  • 1 tsp Extra virgin olive oil 0.2oz

Steps 

  1. Heat a medium skillet over medium heat.
  2. Brush one side of the tortilla with the olive oil. Place your tortilla in the warm skillet, oiled side down. Sprinkle cheese onto half of the tortilla. Add the bell pepper, onion, jalapeno and tomatoes over the cheese. Fold the empty side to close the tortilla. Allow to cook for about 1 to 2 minutes until golden brown.
  3. Carefully flip over the tortilla with a spatula. Allow the second side of the quesadilla to cook until golden brown. Reduce the heat if necessary to prevent burning.
  4. Remove from the heat and transfer the quesadilla to a cutting board. Use a pizza slicer or knife to slice it into 3 to 4 pieces.
