Cheesy breakfast burrito

Ingredients  

  • 5 Cherry tomatoes, cut in half 3oz
  • 2 tbsp Avocado, diced 1.1oz
  • tbsp Red onion, chopped 0.5oz
  • 1 dash Black pepper
  • 1 large Egg 1.8oz
  • 1 Whole-wheat tortilla 1.4oz
  • 2 tbsp Cheddar cheese, reduced-fat, shredded 0.5oz
  • 1 small Fruit, any type 3.5oz

Steps 

  1. In a bowl, mix together tomatoes, avocado, red onion and pepper. Set aside.
  2. Lightly whisk egg. Season to taste. Pour into a non-stick pan over medium heat and continue to stir until egg is cooked through and light and fluffy.
  3. Place scrambled egg in the center of the tortilla, sprinkle with cheese and top with avocado mixture. Roll into a tasty burrito.
  4. Enjoy with a piece of fruit, or save it for a mid-morning snack.
