Mini Pumpkin Pies

Ingredients  

  • 1 pkg refrigerated mini pie crusts
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 1 15oz can pumpkin puree
  • 1 12oz can evaporated milk
  • 1 egg

Steps 

  1. Roll out the pie crust. Use a cup to cut out the dough to fit in individual muffin pans.
  2. Mix sugar and spices.
  3. Add spices and salt.
  4. Mix in pumpkin, evaporated milk, and egg.
  5. Spoon the mixture into mini pie crusts.
  6. Bake at 400°F for 16-20 minutes.
