Mini Pumpkin Pies

Ingredients

  • 1 pkg refrigerated mini pie crusts
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 1 15oz can pumpkin puree
  • 1 12oz can evaporated milk
  • 1 egg

Instructions

  • Roll out the pie crust. Use a cup to cut out the dough to fit in individual muffin pans.
  • Mix sugar and spices.
  • Add spices and salt.
  • Mix in pumpkin, evaporated milk, and egg.
  • Spoon the mixture into mini pie crusts.
  • Bake at 400°F for 16-20 minutes.
