Garlic chicken zoodles

Ingredients  

  • 1 tsp Extra virgin olive oil 0.2oz
  • 2 tsp Garlic, minced 0.2oz
  • 1 tsp Ginger, minced 0.1oz
  • 3 oz Chicken breast, raw, cut into 1/2 inch pieces 3oz
  • ½ cup Snow peas, ends trimmed 2.8oz
  • 10 spears Asparagus 5.3oz
  • 2 cups Zucchini noodles 6.4oz
  • 1 dash Black pepper

Steps 

  1. Heat a large non-stick frying pan or wok on medium-high heat. Add olive oil, garlic, ginger and chicken. Cook for 5-6 minutes or until golden and cooked through.
  2. Add snow peas and asparagus and stir fry for another 1-2 minutes.
  3. Toss in zoodles and cook for 1 minute then turn off heat. Spoon into bowl to serve and season to taste.
  4. TIP: If you have a spiralizer you can prepare zucchini noodles yourself. Add fresh chilli or chilli flakes with the chicken for an extra kick!
